A Classic Honey Glazed Ham Recipe for Any Occasion!

Honey Baked Ham is a wonderfully tasty dish which is great for any occasion! Classic Honey Glazed Ham is often eaten at Christmas dinner in New Zealand, which makes New Zealand Pohutukawa Honey a must. The New Zealand Pohutukawa tree blooms during the festive season, earning it the nickname, ‘the New Zealand Christmas Tree’.

The sweet, floral flavors of New Zealand Pohutukawa Honey allow the rich flavors of the ham to shine through.

New Zealand Pohutukawa Honey Baked Ham Recipe Serves a crowd

Ingredients:

  • 7kg leg ham on the bone (order from your butcher)
  • Whole cloves to garnish
  • 2/3 Cup brown sugar
  • 1/4 Cup New Zealand Pohutukawa Honey
  • 1 Tablespoon wholegrain mustard

Method:

  1. Preheat the oven to 180 degrees Celsius.
  2. Remove the rind from the ham, using a sharp knife (or ask your butcher to do this for you).
  3. Score the fat into a diamond pattern and press a clove into the center of each diamond shape.
  4. Combine the sugar, New Zealand Pohutukawa Honey and mustard in a bowl (try warming the mixture slightly to make it easier to mix).
  5. Carefully spread the honey glaze over the ham with the back of a spoon.
  6. Place a rack in the bottom of a deep baking dish, and add two cups of water. Make sure the rack sits above the water. Place the ham on the rack and cover the ham and dish tightly with foil.
  7. Cook for 45 minutes at 180 degrees Celsius.
  8. Remove the foil from the ham and increase the heat to 210 degrees Celsius. Bake for another 20 minutes until the surface is caramelized and golden.
  9. Allow the ham to rest for at least 15 minutes before carving then enjoy!
